Ingredients

  • 3 cups broccoli florets
  • 1 cup white rice (or jasmine rice)
  • 2 cups water
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 0.5 cup onion, finely chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch. Set aside.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add a pinch of salt, then stir in the rinsed rice. Reduce heat to low, cover, and let the rice simmer for about 15 minutes or until all the water is absorbed.

Step 3

While the rice cooks, steam the broccoli. Add the broccoli florets to a steamer basket over a pot of boiling water. Cover and steam for 5-7 minutes until tender but still bright green. Remove from heat, chop finely, and set aside.

Step 4

In a large skillet, heat olive oil and butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.

Step 5

Add the minced garlic to the skillet and cook for 1 minute, stirring constantly to avoid burning.

Step 6

Stir the cooked rice into the skillet, breaking up any clumps, and combine it with the onion and garlic mixture.

Step 7

Fold the chopped broccoli into the skillet and mix well. Season with salt and black pepper to taste.

Step 8

Sprinkle the grated Parmesan cheese over the mixture and gently stir until the cheese is melted and evenly distributed.

Step 9

Remove the skillet from heat. Optionally, garnish with fresh parsley for a bright finish.

Step 10

Serve warm as a side dish or a light main course. Enjoy!
