  • 0.5 cup Mayonnaise

  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 2 stalks Celery, finely chopped
  • 0.25 cup Red onion, finely diced
  • 2 tablespoons Fresh parsley, chopped
  • 0.25 cup Sliced almonds, toasted
  • 1 cup Seedless grapes, halved
  • 4 pieces Romaine lettuce leaves (optional, for serving)
  • 4 pieces Croissants or sandwich bread (optional, for serving)

Directions

Step 1

Fill a medium pot with water and add the chicken breasts. Bring to a boil, then reduce to a simmer. Cook for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 2

Remove the chicken from the pot and let it cool. Once cool, shred the chicken into bite-sized pieces using two forks or chop it into small cubes.
