Ingredients

  • 2 sheets Puff pastry sheets
  • 120 grams Almond flour
  • 100 grams Powdered sugar
  • 100 grams Unsalted butter
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Dark rum (optional)
  • 1 tablespoon All-purpose flour (for dusting)
  • 1 tablespoon Milk
  • 1 piece Ceramic fève (charm or bean, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

In a mixing bowl, cream the butter and powdered sugar together until light and fluffy.

Step 3

Add 2 eggs, one at a time, into the butter-sugar mixture, mixing well after each addition.

Step 4

Stir in the almond flour, vanilla extract, and rum (if using) until the almond cream is smooth and well combined. Set aside.

Step 5

Roll out the puff pastry sheets on a lightly floured surface. Use a plate or round template to cut out two 10-inch (25 cm) circles from the pastry.

Step 6

Place one pastry circle onto the prepared baking sheet. Spread the almond cream evenly over the pastry, leaving a 1-inch (2.5 cm) border around the edges.

Step 7

If using a fève (charm), place it gently into the almond cream towards the outer edge (to avoid cutting into it later).

Brush the edges of the pastry circle with a little water, then place the second pastry circle on top. Press the edges together to seal, and crimp them with a fork or your fingers.

In a small bowl, whisk the remaining egg with the milk to create the egg wash. Brush the top of the pastry with the egg wash.

Using a sharp knife, score decorative patterns (such as spirals or sunburst designs) onto the top of the pastry, being careful not to cut through. Make a small hole in the center to allow steam to escape.

Bake in the preheated oven for 25–30 minutes, or until the galette is puffed and golden brown.
