Ingredients

  • 1 cup Ensure High Protein drink (vanilla or flavor of choice)
  • 0.75 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 2 tablespoons Unsalted butter (melted)
  • 1 tablespoon Honey or maple syrup (optional, for sweetness)
  • 1 as needed Nonstick cooking spray or additional butter

Directions

Step 1

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt until evenly combined.

Step 2

In a separate large bowl, whisk the egg until lightly beaten. Add the Ensure High Protein drink and melted butter to the egg, and stir until smooth.

Step 3

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few small lumps are okay.

Step 4

If desired, stir in the honey or maple syrup for a touch of sweetness.

Step 5

Preheat a nonstick skillet or griddle over medium heat. Lightly grease with nonstick cooking spray or butter.

Step 6

Scoop about 1/4 cup of batter onto the skillet for each pancake. Using the back of a spoon, gently spread the batter into a uniform circle.

Step 7

Cook the pancakes for 2-3 minutes or until bubbles form on the surface and the edges look set. Flip and cook for an additional 1-2 minutes, or until golden brown on both sides.

Step 8

Repeat with the remaining batter, greasing the skillet as needed between batches.

Step 9

Serve warm with fresh fruit, a dollop of yogurt, or a drizzle of additional maple syrup, if desired.
