Ingredients

  • 4 cups Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 cup Black beans
  • 1 cup Corn kernels
  • 1 medium Red bell pepper
  • 1 large Avocado
  • 0.25 cup Cilantro
  • 1 small Jalapeño pepper
  • 3 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Honey
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and chop the romaine lettuce into bite-sized pieces and place in a large salad bowl.

Step 2

Halve the cherry tomatoes, rinse and drain the black beans, and add both to the salad bowl.

Step 3

If using fresh corn, remove kernels from the cob; if using canned or frozen corn, ensure it's drained or thawed. Add the corn to the salad.

For the Picoso Dressing, mince the jalapeño pepper and place it in a small bowl or jar. Add lime juice, olive oil, honey, ground cumin, chili powder, salt, and black pepper.

Step 6

Whisk or shake the dressing ingredients vigorously until well combined.

Step 7

Drizzle the dressing over the salad and toss gently until all ingredients are evenly coated.

Step 8

Serve immediately as a refreshing side dish or a light main course.
