  • 1 cup Yellow cornmeal (polenta)
  • 4 cups Water
  • 1 teaspoon Salt
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons Butter
  • 1 teaspoon Olive oil (optional)
  • 0.25 teaspoon Freshly ground black pepper (optional)

Directions

Step 1

In a medium saucepan, bring the water to a boil over high heat. Add the salt to the boiling water.

Reduce the heat to medium-low and gradually whisk in the cornmeal, a little at a time, to avoid lumps.

Continue whisking until the mixture begins to thicken, about 2-3 minutes.

Lower the heat to low and cover the saucepan. Cook the polenta, stirring frequently with a wooden spoon, for about 25-30 minutes or until it reaches a creamy consistency. If the polenta thickens too much during cooking, add a bit more water, 1/4 cup at a time, to loosen it.

Remove the saucepan from the heat and stir in the butter and grated Parmesan cheese until fully melted and incorporated.
