Ingredients

  • 1 pound Ground beef
  • 2 tablespoons Olive oil
  • 1 Yellow onion (chopped)
  • 1 Bell pepper (chopped, any color)
  • 3 Garlic cloves (minced)
  • 2 tablespoons Tomato paste
  • 14 ounces Diced tomatoes (canned, undrained)
  • 2 cups Beef or chicken broth
  • 1 cup White rice (long-grain)
  • 1.5 teaspoons Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 cup Green olives (sliced)
  • 2 tablespoons Fresh cilantro (chopped, for garnish)
  • 1 Lime wedges (for serving)

Directions

Step 1

In a large skillet, heat the olive oil over medium heat.

Step 2

Add the ground beef and cook, breaking it up with a wooden spoon, until browned and fully cooked (about 6-8 minutes). Drain any excess fat if necessary.

Step 3

Add the chopped onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are softened (about 5 minutes).

Step 4

Stir in the tomato paste, cumin, smoked paprika, dried oregano, salt, and ground black pepper. Cook for 1 additional minute, allowing the spices to toast slightly.

Step 5

Pour in the diced tomatoes (with their juices) and beef or chicken broth, then bring the mixture to a simmer.

Step 6

Stir in the uncooked rice, making sure it is evenly distributed in the liquid. Reduce the heat to low, cover the skillet with a lid, and allow to cook for 18-20 minutes, or until the rice is tender and the liquid is absorbed.

Step 7

Once the rice is cooked, gently stir in the sliced green olives. Taste and adjust seasoning if needed.

Step 8

Garnish with freshly chopped cilantro and serve with lime wedges on the side for a burst of freshness.
