Preheat your oven to 180°C (160°C fan) or 350°F and grease a medium-sized ovenproof dish with butter.
Spread the softened butter on one side of each slice of brioche or bread, then cut the slices into triangles or rectangles.
In a frying pan over medium heat, add the light brown sugar and sliced apples. Sprinkle with ground cinnamon and cook for 5-7 minutes until softened. Remove from heat.
