Ingredients

  • 350 grams all-purpose flour
  • 2 teaspoons baking powder
  • 50 grams caster sugar
  • 85 grams unsalted butter
  • 175 milliliters whole milk
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 0.25 teaspoons salt

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine the flour, baking powder, caster sugar, and salt.

Step 3

Cut the butter into small cubes and rub it into the dry ingredients using your fingertips until the mixture resembles fine breadcrumbs.

Step 4

In a separate bowl, whisk together the milk and vanilla extract.

Step 5

Make a well in the center of the dry ingredients and gradually pour in the milk, stirring with a butter knife or spatula to form a soft dough. Reserve about 1 tablespoon of milk for glazing.

Step 6

Lightly flour a clean surface and gently knead the dough until it comes together, being careful not to overwork it.

Step 7

Roll the dough out to a thickness of about 2.5 cm (1 inch) and use a 5 cm (2 inch) round cutter to cut out scones. Press straight down without twisting to ensure even rising.

Step 8

Place the scones on the prepared baking tray, spaced slightly apart. Brush the tops with the reserved milk for a golden finish.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the scones are well-risen and lightly golden.

Step 10

Allow the scones to cool slightly on a wire rack before serving warm with clotted cream and jam.
