  • 2 tablespoons Optional mix-ins, such as chia seeds or shredded coconut

Directions

Step 1

Place the pitted Medjool dates in a food processor and pulse until they begin to form a sticky paste. Stop and scrape down the sides as needed.

Step 2

Add the almonds and cashews to the food processor. Pulse until the mixture is crumbly but holds together when pressed.

Step 3

Add the cocoa powder, vanilla extract, sea salt, and any optional mix-ins (such as chia seeds or shredded coconut). Pulse again until all ingredients are fully combined and the mixture resembles a thick dough.

Step 4

Transfer the mixture to a parchment-lined baking dish or sheet. Press it down firmly and evenly into a flattened, compact layer using your hands or the back of a spoon.

Step 5

Refrigerate for at least 1 hour to allow the bars to firm up.
