Ingredients

  • 6 pieces sausages
  • 1 large onion
  • 2 medium bell peppers (any color)
  • 2 pieces garlic cloves
  • 500 grams potatoes
  • 400 grams canned diced tomatoes
  • 250 milliliters chicken or vegetable stock
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 100 grams cheddar cheese (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Heat 1 tablespoon of olive oil in a large skillet or frying pan over medium heat. Add the sausages and cook for 5-7 minutes, turning occasionally, until browned but not fully cooked. Remove them from the pan and set aside.

Step 3

In the same pan, add the remaining 1 tablespoon of olive oil. Cook the chopped onion for 3-4 minutes until softened.

Step 4

Stir in the diced bell peppers and minced garlic, cooking for another 2-3 minutes until fragrant.

Step 5

Add the smoked paprika and dried oregano to the pan, stirring to combine, followed by the canned diced tomatoes and stock. Season with salt and pepper and let the mixture simmer for 5 minutes.

Meanwhile, slice the potatoes into thin rounds (about 5-7mm thick). If using leftover cooked potatoes, simply cut them into slices as needed.

Transfer half of the tomato and vegetable mixture into the bottom of a large ovenproof casserole dish. Layer half the potato slices on top.

Step 8

Arrange the partially cooked sausages over the potatoes, then cover with the remaining tomato mixture. Finish with a final layer of potato slices on the top.

Optional: Sprinkle grated cheddar cheese over the top if desired for a cheesy crust.

Step 10

Cover the casserole dish with foil and bake in the preheated oven for 30 minutes.

Step 11

Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden and crispy.

Step 12

Let the casserole rest for 5 minutes before serving. Enjoy warm with a side salad or crusty bread.
