Ingredients

  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 0.5 cup Pecans (optional, chopped)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a clean, grease-free bowl, use a hand or stand mixer to beat the egg whites at medium speed until foamy.

Step 3

Gradually add the sugar, one tablespoon at a time, while continuing to beat the egg whites. Increase the speed to high and beat until stiff, glossy peaks form.

Step 4

Gently fold in the vinegar, vanilla extract, and salt until well combined. If using, fold in the chopped pecans.

Step 5

Drop spoonfuls of the meringue mixture onto the prepared baking sheet, spacing them about 2 inches apart. Each mound should resemble a small hill or tomb.

Place the baking sheet in the oven and immediately turn off the heat. Do not open the oven door during this time!

Step 7

Let the cookies sit in the oven undisturbed for at least 4 hours or overnight. This allows the cookies to set and form their signature hollow centers.
