  • 450 grams Beef sirloin or flank steak
  • 4 tablespoons Soy sauce
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 tablespoons Cornstarch
  • 0.5 teaspoons Ground white pepper
  • 1 teaspoons Sesame oil
  • 3 tablespoons Vegetable oil
  • 1 tablespoons Fresh ginger, minced
  • 2 cloves Garlic, minced
  • 3 Green onions, sliced
  • 1 Red bell pepper, thinly sliced
  • 2 teaspoons Sugar
  • 3 tablespoons Oyster sauce
  • 0.5 cups Beef or chicken stock
  • 0.25 teaspoons Chili flakes (optional)
  • 0 Steamed rice (for serving)

Directions

Step 1

Slice the beef thinly against the grain into bite-sized pieces.

Step 2

In a mixing bowl, combine 2 tablespoons of soy sauce, Shaoxing wine, 1 tablespoon of cornstarch, ground white pepper, and sesame oil. Add the beef slices and marinate for 15 minutes.

Step 3

In a small bowl, mix the remaining soy sauce, sugar, oyster sauce, beef stock, and 1 tablespoon of cornstarch. Set aside.

Heat 2 tablespoons of vegetable oil in a large wok or skillet over high heat. Add the beef in batches and sear for 1-2 minutes per side until browned. Remove the beef and set aside.

Return the beef to the wok. Stir the sauce mixture and pour it over the beef and vegetables. Add chili flakes if desired.

Toss everything together and cook until the sauce thickens and evenly coats the beef, about 2-3 minutes.
