Ingredients

  • 200 grams unsalted butter
  • 100 grams caster sugar (superfine sugar)
  • 300 grams all-purpose flour
  • 50 grams cornstarch
  • 100 grams strawberry or raspberry jam
  • 200 grams powdered sugar
  • 2 tablespoons water
  • 12 pieces glacé cherries (halved)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, cream together the butter and caster sugar until light and fluffy using a hand mixer or wooden spoon.

Step 3

In a separate bowl, sift together the all-purpose flour and cornstarch. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.

Lightly flour your work surface, then roll out the dough to approximately 5mm (1/4 inch) thick.

Using a round cookie cutter (about 6cm/2.5 inches in diameter), cut out circles and place them onto the prepared baking tray. Gather scraps, re-roll, and continue cutting until all the dough is used.
