Ingredients

  • 120 grams All-purpose flour
  • 30 grams Granulated sugar
  • 1 pinch Salt
  • 4 large Eggs
  • 240 milliliters Milk
  • 30 grams Unsalted butter
  • 50 grams Raisins
  • 30 milliliters Rum
  • 15 grams Powdered sugar

Directions

Step 1

In a small bowl, soak the raisins in the rum for about 15 minutes. This step will add a subtle boozy flavor and plump the raisins.

Step 2

In a large mixing bowl, combine the flour, granulated sugar, and a pinch of salt. Whisk together until evenly mixed.

Step 3

Separate the eggs into two bowls: yolks in one and whites in another. Add the milk to the yolks and whisk until smooth, then stir this mixture into the bowl of flour. Mix until you have a smooth batter, being careful not to overmix.

Step 4

Using a handheld or stand mixer, whip the egg whites until stiff peaks form. Gently fold the egg whites into the batter in three stages, maintaining as much air as possible for a fluffy pancake.

Step 5

Heat a large non-stick or cast-iron skillet over medium heat and melt half of the butter. Pour the batter into the skillet, spreading it out evenly. Sprinkle the soaked raisins over the top.

Step 6

Cook for about 4–5 minutes, or until the bottom is golden brown and the surface is set. Use a spatula to cut the pancake into quarters, then flip each piece to cook the other side for another 2–3 minutes.

Step 7

Once fully cooked, use the spatula or two forks to tear the pancake into bite-sized pieces directly in the pan.

Step 8

Add the remaining butter and a sprinkle of granulated sugar to the pan. Let the pieces caramelize slightly for 1–2 minutes, tossing them gently to coat.

Step 9

Serve the Kaiserschmarren immediately on warm plates, dusted with powdered sugar. Pair with plum compote or your favorite fruit preserves for an authentic touch.
