Ingredients

  • 3 cups All-purpose flour
  • 0.75 cup Unsalted butter
  • 1 teaspoon Salt
  • 0.5 cup Cold water
  • 1 cup Diced ham
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Pitted green olives
  • 1 large Egg
  • 1 tablespoon Milk (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt.

Step 2

Cut the unsalted butter into small cubes and add it to the flour mixture. Use your fingers or a pastry cutter to combine until the mixture resembles coarse crumbs.

Step 3

Gradually add the cold water, 1 tablespoon at a time, and mix until the dough comes together. Do not overmix.

Step 4

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Step 5

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 6

In a medium bowl, combine the diced ham, shredded mozzarella cheese, and pitted green olives. Mix well to create the filling.

Step 7

On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Use a 4- to 5-inch round cutter to cut out circles.

Step 8

Place a heaping tablespoon of the filling in the center of each circle.

Step 9

Fold the dough over the filling to create a half-moon shape. Press the edges together tightly and crimp with a fork to seal.

Step 10

In a small bowl, whisk together the egg and 1 tablespoon of milk to make an egg wash.

Step 11

Place the empanadas onto the prepared baking sheet and brush the tops with the egg wash.

Step 12

Bake in the preheated oven for 20–25 minutes, or until the empanadas are golden brown.

Step 13

Remove from the oven, let cool slightly, and serve warm.
