Ingredients

  • 12 pieces Manicotti shells
  • 2 tablespoons Olive oil
  • 1 pound Ground turkey
  • 1 medium Yellow onion, finely diced
  • 3 cloves Garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1.5 cups Ricotta cheese
  • 2 cups Shredded mozzarella cheese
  • 0.5 cups Grated Parmesan cheese
  • 2 tablespoons Fresh parsley, chopped
  • 1 large Egg
  • 3 cups Marinara sauce

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the manicotti shells according to package instructions until al dente. Drain and set aside to cool slightly.

Step 3

Heat olive oil in a large skillet over medium heat. Add the ground turkey and cook until no longer pink, breaking it up with a spoon, about 5–6 minutes.

Step 4

Add the diced onion and garlic to the skillet with the turkey. Cook for another 3–4 minutes until the onion softens. Stir in the Italian seasoning, salt, and pepper, then remove from heat and let the mixture cool slightly.

Step 5

In a mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella, Parmesan cheese, parsley, and the egg. Mix well.

Step 6

Add the cooled turkey mixture to the cheese mixture and stir until fully incorporated.

Step 7

Spread 1 cup of marinara sauce evenly across the bottom of a 9x13-inch (3-quart) baking dish.

Step 8

Using a small spoon or a piping bag, carefully fill each manicotti shell with the turkey-cheese mixture, then place the stuffed shells in the baking dish in a single layer.

Step 9

Top the stuffed shells with the remaining marinara sauce, spreading it evenly to ensure all the shells are covered.

Step 10

Sprinkle the remaining 1 cup of mozzarella cheese over the top.

Step 11

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for another 15 minutes, or until the cheese is bubbly and golden.

Step 12

Remove from the oven and let the dish rest for 5 minutes before serving. Garnish with additional parsley if desired.
