Ingredients

  • 6 cups Fresh peaches (peeled, pitted, and sliced)
  • 1 tablespoon Lemon juice
  • 3 tablespoons Granulated sugar
  • 1.5 tablespoons Cornstarch
  • 0.5 teaspoon Ground cinnamon (for filling)
  • 1 cup Old-fashioned rolled oats
  • 0.5 cup Whole wheat flour
  • 1 teaspoon Ground cinnamon (for topping)
  • 0.25 cup Light brown sugar
  • 0.25 teaspoon Salt
  • 0.25 cup Unsweetened applesauce
  • 2 tablespoons Melted unsalted butter
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish with non-stick spray or a small amount of butter.

Step 2

In a large mixing bowl, combine the sliced peaches, lemon juice, granulated sugar, cornstarch, and ground cinnamon (for filling). Toss until the peaches are evenly coated.

Step 3

Transfer the peach mixture into the prepared baking dish, spreading it out into an even layer.

Step 4

In another bowl, prepare the topping by combining the rolled oats, whole wheat flour, ground cinnamon (for topping), light brown sugar, and salt.

Step 5

Add the unsweetened applesauce, melted butter, and vanilla extract to the dry topping mixture. Stir with a fork until the mixture becomes crumbly.

Step 6

Sprinkle the crumbly topping evenly over the peaches in the baking dish.

Step 7

Place the dish in the preheated oven and bake for 30–35 minutes, or until the topping is golden brown and the peach filling bubbles around the edges.

Step 8

Remove the dish from the oven and let it cool for at least 10 minutes before serving to allow the flavors to meld and the juices to thicken.

Step 9

Serve warm on its own or with a dollop of lower-fat whipped cream or a small scoop of vanilla frozen yogurt, if desired.
