Ingredients

  • 1.5 pounds Beef flank steak
  • 0.25 cups Cornstarch
  • 0.5 cups Soy sauce
  • 0.5 cups Water
  • 0.75 cups Brown sugar
  • 4 cloves Garlic
  • 1 tablespoon Ginger (minced)
  • 2 tablespoons Vegetable oil
  • 4 Green onions (sliced)
  • 1 tablespoon Sesame seeds (optional, for garnish)

Directions

Step 1

Slice the beef flank steak thinly against the grain into strips about 1/4 inch thick.

Step 2

In a large bowl, add the cornstarch and toss the beef strips in it until evenly coated. Shake off any excess cornstarch.

Step 3

Heat the vegetable oil in a skillet over medium-high heat. Sear the beef strips in batches for 1-2 minutes per side, just until browned. Do not fully cook the beef; transfer directly to the crock pot.

Step 4

In a medium bowl, combine the soy sauce, water, brown sugar, minced garlic, and ginger. Mix well and pour this sauce over the beef in the crock pot.

Step 5

Cover the crock pot with its lid and set to cook on low for 4 hours, or high for 2 hours. Stir occasionally if possible.

Step 6

When the beef is fully tender, add the sliced green onions to the crock pot and stir to combine.

Step 7

Serve the Mongolian beef immediately over steamed rice or noodles. Garnish with sesame seeds if desired.
