  • 0.5 cups Brown sugar, packed
  • 0.25 cups Freshly squeezed lemon juice
  • 0.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 0.25 teaspoons Ground cloves
  • 2 tablespoons Dijon mustard
  • 20 pieces Whole cloves (optional)

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

Place the bone-in ham on a large rack in a roasting pan, flat side down. Trim away any excess fat, leaving a thin layer intact for flavor and moisture retention.

If desired, score the surface of the ham in a crisscross pattern. Optionally, insert whole cloves into the intersections of the scoring lines for added aroma and taste.

In a medium saucepan over medium heat, combine the honey, brown sugar, lemon juice, ground cinnamon, ground nutmeg, ground cloves, and Dijon mustard. Stir continuously until the mixture is smooth and begins to simmer. Remove the glaze from the heat and set aside.

Remove the foil and increase the oven temperature to 375°F (190°C). Brush the remaining glaze over the ham, ensuring it is well-coated. Return the ham to the oven and bake uncovered for an additional 20 to 30 minutes, or until the glaze is caramelized and bubbly, and the internal temperature reaches 140°F (60°C).

Step 9

Remove the ham from the oven and let it rest for 15 minutes before carving.
