Ingredients

  • 4 pieces (8-10 ounces each) ribeye steaks
  • 2 teaspoons kosher salt
  • 1.5 teaspoons black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 1 large, thinly sliced yellow onion
  • 12 ounces, cleaned and sliced wild mushrooms (such as cremini, shiitake, or oyster)
  • 2 minced garlic cloves
  • 1 teaspoon fresh thyme leaves
  • 0.33 cup dry white wine
  • 0.25 cup heavy cream
  • 2 tablespoons, chopped (optional, for garnish) fresh parsley

Directions

Step 1

Season both sides of the ribeye steaks with 1 teaspoon of salt and 1 teaspoon of black pepper. Let them sit at room temperature for 10-15 minutes while prepping other ingredients.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. When the oil starts to shimmer, add the steaks to the skillet. Sear for 3-4 minutes per side for medium-rare, or adjust to your desired temperature. Remove the steaks from the skillet and set aside to rest under foil.

Stir in the heavy cream and cook for another 1-2 minutes until the sauce thickens slightly. Taste and adjust seasoning if needed.

Serve the steaks topped generously with the wild mushroom and onion mixture. Garnish with chopped fresh parsley, if desired.
