Brew strong espresso or coffee and let it cool to room temperature. If desired, stir in coffee liqueur for an added depth of flavor.
Separate the egg yolks and place them in a heatproof bowl. Add granulated sugar to the yolks.
Set the bowl over a saucepan of simmering water, ensuring the bottom of the bowl does not touch the water. Whisk continuously until the mixture thickens and becomes pale, approximately 5 minutes. Remove from heat and let cool slightly.
In a separate bowl, beat the heavy cream and vanilla extract using an electric mixer until soft peaks form.
In another large bowl, combine the mascarpone cheese with the cooled egg yolk mixture. Mix gently until smooth.
