Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground cinnamon
  • 6 tablespoons Unsalted butter (cold)
  • 0.5 cup Cooked bacon (crumbled)
  • 1 cup Mashed sweet potato (cooled)
  • 0.25 cup Whole milk
  • 1 tablespoon Honey
  • 2 tablespoons Melted butter (for brushing)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon.

Step 3

Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.

Step 4

Stir in the crumbled bacon until evenly distributed.

Step 5

In a separate bowl, combine the mashed sweet potato, milk, and honey. Mix until smooth and well blended.

Step 6

Make a well in the center of the dry ingredients and pour in the sweet potato mixture. Stir gently until the dough comes together. Avoid overmixing.

Step 7

Transfer the dough onto a lightly floured surface and gently knead it a few times. Pat it out to about 1-inch thickness.

Step 8

Use a round biscuit cutter (about 2.5 inches in diameter) to cut out biscuits. Re-roll the scraps as needed to cut additional biscuits.

Step 9

Place the biscuits on the prepared baking sheet, spacing them about 1 inch apart.

Step 10

Brush the tops of the biscuits with melted butter for a golden finish.

Step 11

Bake in the preheated oven for 12-15 minutes, or until the biscuits are risen and golden brown on top.

Step 12

Remove from the oven and let cool slightly before serving. These biscuits are best enjoyed warm!
