Ingredients

  • 6 Bell peppers or sweet banana peppers
  • 2 tablespoons Olive oil
  • 1 pound Ground beef or pork
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 cup Cooked white or brown rice
  • 1.5 cups Tomato sauce
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried oregano

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers or sweet banana peppers and carefully remove the seeds and membranes. Rinse the peppers and set them aside.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes. Then, add the minced garlic and cook for 1 more minute.

Step 4

Add the ground beef or pork to the skillet. Cook until the meat is browned and fully cooked, breaking it up with a wooden spoon as it cooks.

Step 5

Stir in the cooked rice, 1 cup of tomato sauce, half of the shredded mozzarella, grated Parmesan, parsley, salt, black pepper, and dried oregano. Mix everything well and remove from the heat.

Stuff each pepper with the meat and rice mixture, packing it tightly. Place the stuffed peppers upright in a baking dish.

Step 7

Spoon the remaining 0.5 cup of tomato sauce over the top of the stuffed peppers. Cover the dish with aluminum foil.

Bake in the preheated oven for 30 minutes. Remove the foil, sprinkle the remaining mozzarella cheese over the peppers, and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.

Step 9

Remove from the oven and let the peppers rest for 5 minutes before serving. Garnish with extra parsley if desired.
