  • 4 cups Chicken stock
  • 1 15-ounce can Canned diced tomatoes (with juices)
  • 1 tablespoon Cajun seasoning
  • 1 leaf Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 stalks Green onions (sliced for garnish)
  • 4 cups Cooked white rice (for serving)

Directions

Step 1

Heat the vegetable oil in a large heavy-bottomed pot or Dutch oven over medium heat. Slowly whisk in the flour to make a roux. Stir constantly for about 15–20 minutes, or until the roux turns a deep, golden brown color. Be careful not to burn it.

Add the diced onion, green bell pepper, and celery to the roux. Cook for about 5 minutes, stirring frequently, until the vegetables are softened.
