Ingredients

  • 1 loaf Ciabatta bread
  • 8 slices Prosciutto
  • 8 ounces Fresh mozzarella
  • 4 tablespoons Basil pesto
  • 2 cups Arugula
  • 2 tablespoons Olive oil
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Slice the ciabatta loaf into 4 equal-sized pieces and then slice each piece in half horizontally to create sandwich halves.

Step 2

Spread 1 tablespoon of basil pesto on the cut side of each bottom half of the ciabatta slices.

Step 3

Layer 2 slices of prosciutto evenly across each bottom half, followed by 2 ounces of fresh mozzarella.

Step 4

Add a handful of arugula on top of the mozzarella and season lightly with salt and black pepper.

Step 5

Place the top half of the ciabatta bread on each sandwich to assemble them.

Step 6

Heat a panini press or a grill pan over medium heat. If using a grill pan, place a heavy skillet or foil-wrapped brick on top of the sandwiches to press them down while cooking.

Step 7

Brush the outside of each sandwich with olive oil on both sides to help them toast and crisp evenly.

Step 8

Place the sandwiches in the panini press or grill pan and cook for 3-5 minutes, or until the bread is golden brown and the mozzarella is melted.

Step 9

Remove from the heat, cut each sandwich in half (if desired), and serve warm.
