Ingredients

  • 16 oz Penne pasta
  • 1 lb Italian sausage (mild or spicy, casings removed)
  • 2 tbsp Olive oil
  • 1 medium Yellow onion, finely chopped
  • 4 cloves Garlic, minced
  • 28 oz Crushed tomatoes (canned)
  • 2 tbsp Tomato paste
  • 0.5 cup Dry white wine
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 0.5 tsp Red pepper flakes
  • 1 tsp Salt
  • 0.25 tsp Freshly ground black pepper
  • 0.5 cup Heavy cream
  • 2 tbsp Fresh parsley, chopped
  • 0.5 cup Parmesan cheese, grated

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package directions until al dente. Drain and set aside.

Step 2

In a large skillet or sauté pan over medium heat, add the olive oil. Once hot, add the Italian sausage and cook, breaking it up into small pieces, until fully cooked and browned, about 6-8 minutes.

Step 3

Add the chopped onion to the skillet and sauté until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Deglaze the pan by adding the white wine, scraping up any browned bits from the bottom of the pan. Let the wine cook down for 2-3 minutes.

Step 5

Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, red pepper flakes, salt, and black pepper. Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally.

Step 6

Once the sauce has thickened, stir in the heavy cream and allow it to heat through for 1-2 minutes. Taste and adjust seasonings if necessary.

Step 7

Add the cooked penne pasta to the sauce, tossing to ensure the pasta is well coated.

Step 8

Divide the pasta among serving plates or bowls. Garnish with chopped parsley and grated Parmesan cheese.

Step 9

Serve immediately and enjoy!
