Ingredients

  • 4 medium-sized, peeled and sliced into 1/4-inch rounds Russet potatoes
  • 2 medium-sized, thinly sliced Yellow onions
  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 2 tablespoons, chopped (optional for garnish) Fresh parsley
  • 1 teaspoon (or to taste) Kosher salt
  • 0.5 teaspoon (or to taste) Freshly ground black pepper

Directions

Step 1

Place the peeled and sliced potatoes into a large pot. Cover the potatoes with cold water and add a pinch of salt.

Bring the water to a boil over high heat. Once boiling, reduce the heat to medium and cook for 5-7 minutes, or until the potatoes are just tender but still holding their shape. Drain the potatoes well and set aside.
