  • 1 cup green lentils, rinsed
  • 6 cups vegetable broth or chicken broth
  • 1 bay leaf
  • 0.25 teaspoon red pepper flakes
  • 2 cups baby spinach, roughly chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened and the onion is translucent.
