Ingredients

  • 2 pounds Russet potatoes
  • 2 teaspoons Salt
  • 1 cup Mayonnaise
  • 2 tablespoons Yellow mustard
  • 2 teaspoons White vinegar
  • 1 teaspoon Sugar
  • 2 stalks Celery
  • 0.5 medium Red onion
  • 4 Hard-boiled eggs
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Emeril's Essence (or Cajun seasoning)
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Paprika (optional, for garnish)

Directions

Step 1

Peel and dice the Russet potatoes into uniform 1-inch cubes to ensure even cooking.

Step 2

Bring a large pot of water to a boil and add 1 teaspoon of salt. Carefully add the diced potatoes to the boiling water and cook for 12-15 minutes, or until tender but not mushy. Drain and let cool slightly.

Step 3

While the potatoes are cooking, prepare the dressing by combining mayonnaise, mustard, white vinegar, sugar, 1 teaspoon of salt, and Emeril's Essence (or Cajun seasoning) in a mixing bowl. Whisk until smooth and set aside.

Step 4

Chop the celery and red onion into small, even pieces. Finely chop the hard-boiled eggs and parsley.

Step 5

Once the potatoes are slightly cooled but still warm, transfer them to a large mixing bowl. Add the chopped celery, red onion, hard-boiled eggs, and parsley.

Step 6

Pour the dressing over the warm potatoes and gently toss to coat, being careful not to break the potato cubes. Taste and adjust seasoning with black pepper and additional salt if needed.

Step 7

Cover the potato salad with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld together.

Step 8

Before serving, give the salad a light toss and sprinkle with paprika for a pop of color, if desired.

Step 9

Serve chilled and enjoy!
