Ingredients

  • 6 pieces large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon hot sauce
  • 0.5 teaspoon paprika
  • 1 teaspoon white vinegar
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 tablespoon chives, chopped
  • 1 teaspoon jalapeño, finely diced
  • 0.25 teaspoon paprika (for garnish)

Directions

Step 1

Place the eggs in a single layer in a medium saucepan and cover them with cold water by about 1 inch.

Step 2

Bring the water to a rolling boil over medium-high heat, then remove from heat and cover with a tight-fitting lid. Let the eggs sit for 9-12 minutes.

Step 3

After the cooking time is complete, carefully transfer the eggs to a bowl of ice water. Let them cool for at least 5 minutes.

Step 4

Peel the eggs under cold running water and pat them dry with paper towels.

Step 5

Slice the eggs in half lengthwise, and carefully remove the yolks, placing them in a small mixing bowl.

Step 6

Mash the yolks with a fork until smooth.

Step 7

Add the mayonnaise, Dijon mustard, hot sauce, paprika, white vinegar, salt, and black pepper to the mashed yolks. Mix thoroughly until smooth and creamy.

Step 8

Stir in the chopped chives and diced jalapeño to the yolk mixture.

Step 9

Using a small spoon or a piping bag, fill the egg whites with the yolk mixture, mounding slightly on top.

Step 10

Lightly dust the filled eggs with paprika for garnish.

Step 11

Cover the eggs loosely with plastic wrap and refrigerate until ready to serve (at least 30 minutes for best flavor).
