Ingredients

  • 16 ounces fresh spinach
  • 2 tablespoons unsalted butter
  • 1 medium shallot
  • 2 cloves garlic cloves
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 pinch ground nutmeg
  • 1 cup Parmesan cheese (grated)
  • 0 to taste kosher salt
  • 0 to taste freshly ground black pepper

Directions

Step 1

Rinse the fresh spinach thoroughly and remove any tough stems. Blanch the spinach in boiling water for 30 seconds, then transfer immediately to an ice bath to stop the cooking process. Drain well and press out excess moisture. Roughly chop the spinach and set aside.

Step 2

Finely dice the shallot and mince the garlic cloves. Set both aside.

Step 3

In a large skillet over medium heat, melt the butter. Add the shallot and garlic, and sauté until fragrant and softened, about 2-3 minutes.

Step 4

Sprinkle the flour over the sautéed shallot and garlic, stirring to coat them evenly and create a roux. Cook for 1-2 minutes, stirring constantly.

Step 5

Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Bring the mixture to a gentle simmer, allowing it to thicken, about 3-5 minutes.

Step 6

Add the chopped spinach to the skillet and stir to combine. Cook for another 2-3 minutes until the spinach is heated through and coated in the creamy sauce.

Step 7

Stir in the ground nutmeg and Parmesan cheese. Mix well until the cheese is melted and fully incorporated.

Step 8

Season with kosher salt and freshly ground black pepper to taste.

Step 9

Serve immediately as a side dish, garnished with additional Parmesan if desired.
