Ingredients

  • 4 large sweet potatoes
  • 4 tablespoons unsalted butter
  • 0.5 cup heavy cream
  • 2 tablespoons bourbon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 large yellow onions
  • 2 tablespoons olive oil
  • 1 teaspoon brown sugar

Directions

Step 1

Peel and chop the sweet potatoes into large chunks.

Step 2

Bring a large pot of salted water to a boil and add the sweet potatoes. Boil for 15-20 minutes or until tender when pierced with a fork.

While the sweet potatoes are cooking, prepare the caramelized onions. Peel and thinly slice the onions.
