Ingredients

  • 4 pieces Potatoes (large, russet)
  • 4 cups Vegetable oil
  • 1 pound Ground beef (80/20 blend)
  • 1 piece Onion (medium, diced)
  • 3 pieces Garlic cloves (minced)
  • 2 tablespoons Tomato paste
  • 14.5 ounces Canned diced tomatoes (with juice)
  • 1 cup Beef broth
  • 2 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Shredded cheddar cheese
  • 2 stalks Green onions (sliced)

Directions

Step 1

Wash the potatoes thoroughly and cut them into thin fries, about 1/4-inch thick.

Step 2

Soak the sliced potatoes in a bowl of cold water for 30 minutes to remove excess starch. Drain and pat dry with a clean towel.

Step 3

In a deep, heavy-bottomed pot, heat the vegetable oil to 350°F (175°C).

Step 4

Carefully lower the potatoes into the hot oil in small batches and fry for 4-5 minutes, or until golden brown and crispy. Drain the fries on a paper towel-lined plate and season lightly with salt. Set aside.

Step 5

In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a wooden spoon as it cooks. Drain off excess fat if needed.

Step 6

Add the diced onion and minced garlic to the skillet with the beef. Cook for 3-4 minutes until the onion softens and becomes translucent.

Step 7

Stir in the tomato paste and cook for 1 minute, allowing it to coat the meat mixture.

Step 8

Add the canned diced tomatoes (with their juice), beef broth, chili powder, cumin, paprika, salt, and black pepper to the skillet. Stir well to combine.

Step 9

Reduce the heat to low and simmer the chili for 25-30 minutes, stirring occasionally, until thickened and flavorful.

Step 10

Preheat your oven to 400°F (200°C).

Step 11

Arrange the cooked fries on an oven-safe platter or baking sheet. Spoon the hot chili generously over the fries.

Step 12

Sprinkle the shredded cheddar cheese evenly over the chili-topped fries.

Step 13

Place the platter in the oven for 5-7 minutes, or until the cheese is melted and bubbly.

Step 14

Remove from the oven and garnish with sliced green onions.

Step 15

Serve immediately and enjoy your indulgent Emeril's Beef Chili Cheese Fries!
