Directions

Step 1

Warm the milk gently in a saucepan or microwave until it reaches around 110°F (warm to the touch but not hot). Pour the milk into a large mixing bowl and sprinkle the active dry yeast over the top. Allow the yeast to bloom (activate) for 5–10 minutes until foamy.

Step 2

Add the granulated sugar, softened butter, and eggs to the milk and yeast mixture. Stir until combined.

In a separate large bowl, whisk together the all-purpose flour and salt. Gradually add the dry ingredients to the wet mixture, stirring until a sticky dough begins to form.

Roll out the dough-butter package into a larger rectangle (about 10x20 inches). Fold it into thirds, like folding a business letter. Rotate the dough 90 degrees, roll it out again, and fold it into thirds again. Repeat this process two more times for a total of four folds. If the butter begins to soften, chill the dough for 20 minutes between folds.

After the final fold, wrap the dough in plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to relax and develop flavor.
