Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds beef stew meat
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 2 teaspoons paprika (preferably smoked)
  • 1 teaspoon ground cumin
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 3 cups beef broth
  • 1 14-ounce can diced tomatoes (canned)
  • 2 tablespoons tomato paste
  • 2 medium carrots, sliced into rounds
  • 1 large red bell pepper, diced
  • 2 medium potatoes, diced into 1-inch cubes
  • 1 leaf bay leaf
  • 1 cup dry elbow macaroni
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat.

Step 2

Add the beef stew meat to the pot and sear until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

Step 3

In the same pot, reduce the heat to medium and add the diced onion. Sauté until softened and translucent, about 5 minutes.

Step 4

Add the minced garlic, paprika, and ground cumin to the pot. Stir well to coat the onions and cook for 1-2 minutes until fragrant.

Step 5

Return the seared beef to the pot and season with salt and black pepper.

Pour in the beef broth, diced tomatoes (with their juices), and tomato paste. Stir to combine.

Add the sliced carrots, diced red bell pepper, potatoes, and bay leaf to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 60 minutes or until the beef and vegetables are tender.

Step 8

After 60 minutes, add the dry elbow macaroni to the pot and stir well. Continue to cook uncovered for another 10-12 minutes, or until the pasta is fully cooked.

Step 9

Remove the bay leaf and discard. Taste and adjust seasoning with additional salt and pepper, if needed.

Ladle the goulash into bowls and garnish with fresh parsley before serving.
