Ingredients

  • 6 cups (crumbled) Cornbread
  • 2 cups (crumbled) Stale bread
  • 1 cup Unsalted butter
  • 1 large (diced) Yellow onion
  • 3 stalks (diced) Celery stalks
  • 3 minced Garlic cloves
  • 4 cups Chicken stock
  • 2 large (beaten) Eggs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 teaspoons Sage (dried)
  • 1 teaspoon Thyme (dried)
  • 2 tablespoons (chopped) Parsley (fresh)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with butter or cooking spray.

Step 2

In a large skillet, melt the butter over medium heat. Add the diced onion and celery, and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for another minute. Remove from heat.

Step 3

In a large mixing bowl, combine the crumbled cornbread and stale bread. Add the sautéed vegetables to the bowl and mix well.

Step 4

Gradually pour in the chicken stock, stirring as you go, until the mixture is moist but not overly soggy. You may not need all 4 cups of stock, depending on your bread's texture.

Step 5

Stir in the beaten eggs, salt, black pepper, dried sage, dried thyme, and chopped parsley until the mixture is evenly combined.

Step 6

Transfer the mixture to the prepared baking dish and spread it out evenly. Cover the dish with aluminum foil.

Step 7

Bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the top is golden brown and slightly crisp.

Step 8

Remove the dressing from the oven and let it cool slightly before serving. Garnish with additional fresh parsley if desired.
