Ingredients

  • 1 pound ground beef
  • 1 medium, diced onion
  • 3 minced garlic cloves
  • 1 medium, diced green bell pepper
  • 15 ounces (canned, drained and rinsed) red kidney beans
  • 14 ounces (canned) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 box (about 8.5 ounces) cornbread mix
  • 0.75 cup milk
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and garlic, and sauté until they are soft and fragrant, about 3 minutes.

Step 3

Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, about 5-7 minutes.

Step 4

Stir in the diced green bell pepper, red kidney beans, diced tomatoes, and tomato paste.

Step 5

Season the mixture with chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Stir well to combine.

Step 6

Lower the heat and let the chili simmer for 10-15 minutes, stirring occasionally, to allow the flavors to meld.

Step 7

While the chili simmers, prepare the cornbread topping. In a mixing bowl, combine the cornbread mix, milk, and egg. Stir until just combined.

Step 8

Transfer the chili mixture to a 9-inch pie dish or a similar oven-safe baking dish. Spread it out evenly.

Step 9

Sprinkle the shredded cheddar cheese on top of the chili mixture.

Step 10

Carefully spoon the cornbread batter over the top of the cheese, spreading it out evenly with a spatula.

Step 11

Place the dish in the preheated oven and bake for 20-25 minutes, or until the cornbread topping is golden brown and cooked through.

Step 12

Remove the dish from the oven and allow it to cool for 5 minutes before serving.

Step 13

Cut into wedges and serve warm. Enjoy your Emaw's Chili Pie!
