Ingredients

  • 1.75 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoons salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cups boiling water

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and dust them lightly with flour or line them with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed using a hand mixer or stand mixer until the batter is smooth.

Step 4

Reduce the mixer speed to low and carefully mix in the boiling water. The batter will become thin; this is normal.

Step 5

Divide the batter evenly between the prepared cake pans. Tap the pans lightly on a flat surface to remove air bubbles.

Step 6

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 7

Allow the cakes to cool in the pans for 10 minutes. Then, remove them from the pans and let them cool completely on a wire rack.

Step 8

Once cooled, frost the cakes with your favorite chocolate frosting, stack the layers, and serve.
