Ingredients

  • 2 pounds Ground beef (80/20 mix)
  • 1 cup Breadcrumbs
  • 2 large Eggs
  • 0.5 cup Ketchup
  • 2 tablespoons Yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 cup Shredded cheddar cheese
  • 1 cup Diced onion
  • 0.25 cup Dill pickles (chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 slices American cheese slices
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 1.5 cups Milk
  • 1 cup Shredded cheddar cheese (for sauce)
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Ground cayenne pepper (optional)
  • 2 tablespoons Parsley (for garnish, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with non-stick cooking spray.

Step 2

In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, ketchup, yellow mustard, Worcestershire sauce, shredded cheddar cheese, diced onion, chopped pickles, salt, and black pepper. Mix gently with your hands until evenly combined.

Step 3

Transfer the mixture into the prepared loaf pan, pressing it down evenly to form a meatloaf shape.

Step 4

Bake the meatloaf in the preheated oven for 55-60 minutes, or until the internal temperature reaches 160°F (71°C).

Step 5

In the last 5 minutes of baking, lay the American cheese slices on top of the meatloaf so they melt slightly.

Step 6

While the meatloaf bakes, prepare the cheese sauce. In a small saucepan, melt the butter over medium heat. Add the flour and whisk to form a roux, cooking for 1-2 minutes until lightly golden.

Step 7

Gradually whisk in the milk, a little at a time, to prevent lumps. Continue whisking until the mixture thickens, about 3-4 minutes.

Step 8

Stir in the shredded cheddar cheese, garlic powder, and cayenne pepper (if using). Mix until the cheese is completely melted and the sauce is smooth. Remove from heat.

Step 9

Once the meatloaf is done, allow it to rest for 5-10 minutes before slicing.

Step 10

Serve slices of the meatloaf topped generously with the warm cheese sauce. Garnish with parsley if desired.
