Ingredients

  • 1 pound Large shrimp (peeled and deveined)
  • 12 ounces Spaghetti or linguine pasta
  • 6 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 4 cloves Garlic (minced)
  • 3 tablespoons Fresh parsley (chopped)
  • 2 tablespoons Fresh basil (chopped)
  • 1 tablespoon Fresh thyme leaves
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper (freshly ground)
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 0.5 cup Parmesan cheese (grated, optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

While the pasta cooks, pat the shrimp dry with a paper towel. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

Step 3

In a large skillet, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium-high heat. Once the butter has melted and begins to bubble, add the shrimp in a single layer. Cook for 2-3 minutes per side or until they are pink and fully cooked. Remove the shrimp from the skillet and set aside.

Step 4

Reduce the heat to medium and add the remaining olive oil and butter to the skillet. Stir in the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.

Step 5

Add the chopped parsley, basil, thyme, lemon zest, and red pepper flakes (if using) to the skillet. Stir for 1 minute to combine and release the flavors.

Step 6

Pour in the reserved pasta water a bit at a time (start with 1/4 cup) to create a light sauce. Stir in the lemon juice, and adjust the seasoning with the remaining salt and pepper as needed.

Step 7

Return the shrimp to the skillet along with the cooked pasta. Toss everything together until the pasta is well coated in the sauce and the shrimp is evenly distributed.

Step 8

Serve the pasta hot, garnished with grated Parmesan cheese and extra parsley if desired. Enjoy!
