Ingredients

  • 2 pounds ground beef
  • 1 large, diced onion
  • 1 medium, diced bell pepper
  • 28 ounces canned diced tomatoes (with juice)
  • 6 ounces tomato paste
  • 15 ounces kidney beans
  • 15 ounces black beans
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1.5 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup (optional garnish) shredded cheddar cheese
  • 0.5 cup (optional garnish) sour cream
  • 0.25 cup (optional garnish) chopped green onions

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add diced onion and bell pepper to the pot and sauté for 5 minutes until softened.

Step 3

Add ground beef to the pot and cook until browned, breaking it into crumbles with a wooden spoon. Drain excess fat if necessary.

Step 4

Stir in chili powder, cumin, paprika, oregano, garlic powder, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes to toast the spices.

Step 5

Pour in the canned diced tomatoes (including their juice), tomato paste, and beef broth. Stir to combine.

Step 6

Add kidney beans and black beans (rinsed and drained) to the pot. Stir well.

Step 7

Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for 60-90 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasoning as needed. Add more cayenne for spice or salt for balance.

Step 9

Serve hot in bowls. Garnish with shredded cheddar cheese, sour cream, and chopped green onions, if desired.
