Ingredients

  • 2 large (boneless, skinless) chicken breasts
  • 12 large (peeled and deveined) raw shrimp
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 large (minced) garlic cloves
  • 1 cup white wine
  • 1 cup chicken broth
  • 3 tablespoons lemon juice
  • 0.5 teaspoon red pepper flakes
  • 12 ounces fettuccine pasta
  • 2 tablespoons (fresh, chopped) parsley
  • 0.25 cup (optional, for garnish) parmesan cheese

Directions

Step 1

Season both sides of the chicken breasts with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 2

Lightly dredge the chicken breasts in the flour, shaking off any excess.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken and cook for 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

Add 2 tablespoons of butter to the same skillet. Once melted, add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp and set aside with the chicken.

Step 5

Reduce the heat to medium and add the remaining 2 tablespoons of butter to the skillet. Stir in the minced garlic and cook for about 1 minute until fragrant.

Step 6

Deglaze the pan by pouring in the white wine. Let the wine simmer for 2 minutes, scraping the bottom of the skillet with a wooden spoon to loosen browned bits.

Step 7

Add the chicken broth, lemon juice, and red pepper flakes. Bring the sauce to a simmer and let it cook for 5-6 minutes until slightly reduced.

Step 8

Cook the fettuccine pasta in a large pot of salted boiling water according to the package instructions. Drain and set aside.

Step 9

Slice the cooked chicken into thin strips and return it to the skillet along with the shrimp. Stir gently to coat in the sauce.

Step 10

Toss the cooked pasta with the chicken, shrimp, and sauce until well combined.

Step 11

Garnish with chopped parsley and parmesan cheese, if desired. Serve immediately and enjoy your Elswet’s Chicken Shrimp Scampi!
