Ingredients

  • 1.25 cups all-purpose flour
  • 0.5 cups unsalted butter (cold, cubed)
  • 0.25 teaspoons salt
  • 3 tablespoons ice water
  • 2 cups pumpkin puree
  • 0.75 cups granulated sugar
  • 0.25 cups brown sugar (packed)
  • 1 teaspoons ground cinnamon
  • 0.5 teaspoons ground ginger
  • 0.25 teaspoons ground nutmeg
  • 0.25 teaspoons ground cloves
  • 0.25 teaspoons salt
  • 2 large eggs
  • 0.75 cups heavy cream
  • 0.25 cups whole milk
  • 1 teaspoons vanilla extract

Directions

Step 1

To make the crust, combine the flour and salt in a large mixing bowl.

Step 2

Cut the cold, cubed butter into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Step 3

Gradually add ice water, one tablespoon at a time, and mix until the dough just comes together. Be careful not to overwork the dough.

Step 4

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes while you prepare the filling.

Step 5

Preheat your oven to 375°F (190°C).

Step 6

On a floured surface, roll out the chilled dough into a circle about 12 inches in diameter. Fit it into a 9-inch pie dish and trim the edges, leaving a small overhang. Fold the edges under and crimp as desired.

Step 7

In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, cinnamon, ginger, nutmeg, cloves, and salt until smooth and well combined.

Step 8

Add the eggs, one at a time, whisking thoroughly after each addition.

Step 9

Stir in the heavy cream, whole milk, and vanilla extract until the mixture is smooth and creamy.

Step 10

Pour the filling into the prepared pie crust, spreading it evenly with a spatula.

Step 11

Bake the pie in the preheated oven for 50-55 minutes, or until the center is set but still slightly jiggly when lightly shaken.

Step 12

Remove the pie from the oven and allow it to cool completely on a wire rack. The filling will continue to set as it cools.

Step 13

Once cooled, slice and serve with whipped cream or a scoop of vanilla ice cream, if desired.
