Ingredients

  • 6 medium Russet potatoes
  • 4 tablespoons Unsalted butter
  • 3 tablespoons All-purpose flour
  • 2 cups Milk
  • 2 cups Sharp cheddar cheese, shredded
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 0.5 cup Heavy cream
  • 2 tablespoons Chives, finely chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set it aside.

Step 2

Peel the potatoes, then thinly slice them into rounds, about 1/8-inch thick. Set the slices aside in a bowl of cold water to prevent discoloration.

Step 3

In a medium saucepan set over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly, to form a roux.

Step 4

Gradually pour in the milk, whisking constantly to avoid lumps. Continue to cook until the mixture thickens, about 3-4 minutes.

Step 5

Stir in 1 1/2 cups of the shredded cheddar cheese, reserving the rest for later. Add the salt, black pepper, garlic powder, and paprika. Stir until the cheese is fully melted and the sauce is smooth. Remove from heat.

Step 6

Drain and pat the potato slices dry. Layer one-third of the potato slices evenly in the prepared baking dish. Pour one-third of the cheese sauce over the potatoes, spreading it evenly.

Step 7

Repeat the layering process two more times, ending with the remaining cheese sauce on top.

Step 8

Pour the heavy cream over the top layer to add extra creaminess. Cover the dish tightly with aluminum foil.

Step 9

Bake in the preheated oven for 45 minutes. Remove the foil, sprinkle the reserved 1/2 cup of cheddar cheese over the top, and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is golden and bubbly.

Step 10

Remove from the oven and let the dish rest for 5-10 minutes before serving. Garnish with freshly chopped chives, if desired.
