Ingredients

  • 0.5 cup unsalted butter
  • 1 cup granulated sugar
  • 0.5 cup molasses
  • 1 unit large egg
  • 2.25 cups all-purpose flour
  • 1.5 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 2 teaspoons baking soda
  • 0.25 teaspoon salt
  • 0.25 cup granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy using a hand or stand mixer, about 2–3 minutes.

Step 3

Add the molasses and egg to the butter and sugar mixture. Beat until well combined.

Step 4

In a separate medium bowl, whisk together the all-purpose flour, ground ginger, ground cinnamon, ground cloves, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms. Be careful not to overmix.

Step 6

Scoop out about 1 tablespoon of dough and roll it into a ball. Repeat with the remaining dough.

Step 7

Roll each dough ball in the extra 1/4 cup of granulated sugar until coated. Place the sugar-coated balls about 2 inches apart on the prepared baking sheets.

Step 8

Bake in the preheated oven for 10–12 minutes, or until the cookies have puffed up and the tops start to crack slightly. Avoid overbaking for softer cookies.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve and enjoy these spiced, chewy delights with a cup of tea or hot cocoa!
