Ingredients

  • 4 ears Fresh corn on the cob
  • 0.5 cup Mayonnaise
  • 0.25 cup Sour cream
  • 0.5 cup Cotija cheese, crumbled
  • 0.25 cup Cilantro, chopped
  • 1 whole Lime
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Paprika
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Peel back the husks of the corn without removing them, and remove the silk threads. Fold the husks back up and soak the corn in water for about 10 minutes to prevent them from burning.

Step 3

Remove the corn from the water, shake off excess moisture, and brush each ear with olive oil. Sprinkle with salt and pepper.

Step 4

Place the corn on the grill, turning every few minutes, until the kernels are charred and tender, about 12-15 minutes. If you prefer, you can remove the husks completely for more char.

Step 5

While the corn is grilling, prepare the sauce: In a small bowl, mix mayonnaise, sour cream, half of the Cotija cheese, chili powder, paprika, and juice from half a lime. Stir to combine into a smooth, creamy mixture.

Step 6

Once the corn is cooked, remove it from the grill. Using a basting brush or spatula, generously coat each ear of corn with the prepared sauce.

Step 7

Sprinkle the remaining Cotija cheese and chopped cilantro evenly over the coated corn.

Step 8

Serve the corn hot, with lime wedges on the side for extra zest.
