Ingredients

  • 12 ounces rotini pasta
  • 1.5 cups cherry tomatoes
  • 1 large cucumber
  • 1 medium red bell pepper
  • 0.5 small red onion
  • 0.75 cup black olives
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1.5 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Add the rotini pasta and cook until al dente, about 8-10 minutes. Drain and rinse the pasta with cold water to cool it down. Set aside.
