Ingredients

  • 4 medium (about 2 lbs) Russet potatoes
  • 1 medium Yellow onion
  • 3 large Garlic cloves
  • 4 tablespoons Unsalted butter
  • 3 tablespoons All-purpose flour
  • 4 cups Chicken or vegetable broth
  • 2 cups Milk
  • 0.5 cups Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup (optional, for topping) Cheddar cheese, shredded
  • 2 tablespoons (optional, for garnish) Green onions, sliced
  • 2 slices (optional, for topping) Cooked bacon, crumbled

Directions

Step 1

Peel the potatoes and cut them into 1-inch cubes. Finely chop the onion and mince the garlic cloves.

Step 2

In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and sauté for 3-4 minutes, or until softened and translucent. Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.

Step 3

Sprinkle the flour over the onion and garlic mixture. Stir constantly for 1-2 minutes to cook the flour, forming a roux.

Step 4

Slowly pour in the chicken or vegetable broth, whisking constantly to avoid lumps. Add the diced potatoes to the pot and bring the mixture to a boil.

Step 5

Reduce the heat to low and let the soup simmer for about 20 minutes, or until the potatoes are tender when pierced with a fork.

Step 6

Using an immersion blender, puree the soup until smooth, or leave small chunks for a more rustic texture. Alternatively, transfer the soup in batches to a blender, blending carefully, and return it to the pot.

Step 7

Stir in the milk, heavy cream, salt, and black pepper. Simmer for 5 more minutes, allowing the flavors to combine and the soup to thicken further.

Step 8

Taste the soup and adjust seasoning as needed. Ladle the potato soup into bowls and, if desired, top with shredded cheddar cheese, sliced green onions, and crumbled bacon.

Step 9

Serve hot and enjoy Ellen's rich and creamy potato soup!
