Ingredients

  • 6 medium Roma tomatoes
  • 0.5 medium Red onion
  • 2 whole Garlic cloves
  • 1 whole Jalapeño pepper
  • 0.5 cup (packed) Cilantro
  • 2 tablespoons Fresh lime juice
  • 0.5 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Sugar (optional, for balancing acidity)

Directions

Step 1

Wash and dry all your produce thoroughly.

Step 2

Dice the Roma tomatoes into medium chunks and place them into a medium mixing bowl.

Step 3

Finely chop the red onion and add it to the bowl with the tomatoes.

Step 4

Mince the garlic cloves and jalapeño pepper. For less heat, remove the seeds and membrane from the jalapeño before chopping. Add both to the mixing bowl.

Step 5

Coarsely chop the cilantro leaves (discarding thick stems) and add to the bowl.

Step 6

Add the fresh lime juice, ground cumin, salt, black pepper, and, if desired, the sugar to the mixture.

Step 7

Gently toss all the ingredients together to combine. Taste and adjust seasoning as needed.

Step 8

For a chunkier texture, serve as is. For a smoother salsa, transfer the mixture to a food processor or blender and pulse 3-5 times to your desired consistency.

Step 9

Chill the salsa in the refrigerator for at least 30 minutes to let the flavors meld together.

Step 10

Serve with tortilla chips, tacos, or as a topping for grilled meats, and enjoy!
